5 minute salad dressing. Even with my shadow.


So, I have a confession. We ate out this week. A lot. Three times in one week. Yikes.
This week I was dealing with a hangover from my sister’s bachelorette party as well as a dentist appointment from hell. I know, excuses, excuses. I am feeling it as well. A meal here and there at a restaurant, I don’t feel too bad but when I overdo it, I just don’t feel my best. I feel crazy bloated – way too much salt in restaurant food. I have had a few headaches. Crazy sugar cravings at night. Not cool.

No worries, back on track today. Tonight, I’ll be making dinner including this simple salad with homemade dressing. We’ll be dining on the greens I got from the farmer’s market yesterday. So easy and delicious and you can totally make this with a toddler pulling on your leg screaming “Mum-Mum!” Madilyn is my little shadow these days. A few months ago she would play in her pack-n-play while I cooked. These days she wants to watch me and “help.”

Simple Citrus Dressing
Ingredients:
Juice of one piece of citrus
1 tablespoon of real maple syrup
about an 1/8 cup of olive oil
dash of salt
Directions:
Wisk all ingredients together in the bottom of a big salad bowl. Add the greens and toss. I will be topping tonight’s salad with some toasted, chopped walnuts. Yum!
