Be a good sport and make this snack.


For those of you that know me, know that I LOVE snacks. I have called myself the snack queen before. For me, eating just three square meals a day just doesn’t cut it.
I love to snack while watching a movie or watching a game. Let’s go Pens!
So, coming up with some yummy yet nutritious snack recipes has become a personal mission of mine. Another passion of mine when it comes to food is finding new and creative ways to incorporate veggies, especially the green ones. How about we put them together? Don’t be scared. 🙂
Try this one:
Garlicky Broccoli Pesto Dip
Ingredients:
2 cups raw broccoli, cut into small florets (cut up the stems too)
5 medium garlic cloves
2/3 cup sliced or slivered almonds, toasted
1/3 cup freshly grated Parmesan
2 big pinches salt
2 tablespoons fresh lemon juice
1/4 cup olive oil
1/4 cup milk (I used whole milk but I bet you could use almond, rice, etc.)
Directions:
Put a little bit of water in a pot and bring to a boil. Add the broccoli and cook until it becomes bright green. You just want to take the “raw” taste away from the broccoli. In a frying pan, toast the almonds for a few minutes. Puree the cooked broccoli, the garlic, 1/2 cup of the almonds, Parmesan, salt, and lemon juice in a food processor or Vita Mix blender. I bet you could use a Magic Bullet too.  Drizzle in the olive oil and milk and pulse until smooth. Serve with pretzels, crackers and/or veggie sticks. Enjoy!
I am telling you, this dip is AMAZING! It will satisfy that craving for something creamy without all the guilt!
