Cranberry Walnut Oatmeal Energy Cookies


Yes, I turned on my oven in this heat. With this pregnancy and this heat, I have been having trouble staying cool. However, I think my craving for cookies is greater so I turned on the oven.  It was worth it.
This weekend, we are heading to St. Lucia for vacation so I am in the mode of cleaning out my kitchen and using up what ingredients I have in stock. Luckily, I had everything I needed to whip up some cookies.
Have you ever read the ingredients on the back of store bought cookies? Not really cool. Even the “healthier” ones have weird ingredients that are hard to pronounce. Nothing is better than homemade. So, whip these up instead. Really easy.
Cranberry Walnut Oatmeal Energy Cookies
Ingredients:
3 cups rolled oats
2 cups whole wheat flout
1/2 teaspoon sea salt
1/2 cup maple syrup
1/2 cup agave nectar
1 cup unsalted butter, melted
2 teaspoons halzenut extract
1 teaspoon ground cinnamon
2/3 cup chopped walnuts
2/3 cup dried cranberries
Directions:
Preheat oven to 350F. Combine oats, flour, and salt together in a large bowl.
In a separate bowl mix together the maple syrup, butter, hazelnut and cinnamon.
Add wet ingredients to the dry and mix together. Stir in the nuts and cranberries.
Form into cookies and add to parchment paper on a cookie sheet. Bake for about 15 minutes. Enjoy!
