Quick and Easy Kale and Feta Pasta

  • 1 lb pasta of your choice (I used gluten free shells)
  • 3 cups kale, finely chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, chopped
  • 2 tablespoons olive oil
  • ½ cup pine nuts, toasted
  • ½ cup feta cheese, crumbled
  • red pepper flakes, few sprinkles
  1. Prepare pasta as directed. In the meantime, sauté kale, onion and garlic in olive oil until soft. In a small frying pan, toast the pine nuts until golden brown. Toss the pasta with the kale mixture and the pine nuts. Add the feta cheese. Top with red pepper flakes. Enjoy!
