Valentine Berry Swirl Muffins

Ingredients
  • 2 ripe bananas, peeled
  • 3 eggs
  • 1 cup oats
  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • ⅓ bag mixed berries, chopped into small chunks
  • ⅓ cup chia seeds
Instructions
  1. Preheat oven to 350F. Chop about a ⅓ bag of mixed berries, still frozen. In a high speed blender, add the bananas, eggs, ½ of the oats, vanilla, and cinnamon. Blend until smooth. Add the rest of the oats, chia seeds and the chopped fruit. Using a spoon, stir these added ingredients in. Don't blend. You want the fruit to kinda swirl within the muffin mix.
  2. Move to lined muffin tin. You can fill pretty much all the way up. These muffins are dense are don't rise much. Bake for about 10-12 minutes. Let cool. Spread with pink fruity jam like strawberry or raspberry!
