Mint Chocolate Low Carb Brownies

  • 1 cup almond butter
  • ⅓ cup maple syrup
  • 1 cup minced raw zucchini
  • 1 egg
  • 2 tbsp butter or coconut oil
  • 1 tsp mint extract
  • ⅓ cup cocoa powder
  • ½ tsp baking soda
  1. Heat oven to 325F. In a food processor, blend together the almond butter, syrup, egg, butter/oil, and mint extract. Lightly stir in the cocoa powder and baking soda. Stir in the minced zucchini.
  2. Pour the batter into a 9-inch baking pan. Bake for around 25 minutes, until the brownies are done. Check doneness with a toothpick in the middle.
