Cranberry Orange Salad Dressing

  • 1 cup fresh or frozen cranberries
  • 2 tsp orange zest
  • ¼ cup apple cider vinegar
  • ¼ cup pure maple syrup
  • 2 tsp Dijon mustard
  • ½ cup fresh orange slices or juice
  • 4 tbsp extra virgin olive oil
  • ½ tsp salt, or to taste
  • ground black pepper
  1. In a medium pot, heat the cranberries, orange zest, maple syrup, and vinegar over medium heat until the cranberries burst, about 8 mins. They will get soft and start to pop.
  2. Place cranberries in a blender and add the rest of the ingredients. Blend until smooth. Keep in fridge for about a week. Serve over a winter salad and/or use as a marinade.
