Healthy Kid Friendly Spaghetti Shells

Healthy Kid Friendly Spaghetti Shells

We love pasta in our house and I try to kick up the nutrition by making Healthy Kid Friendly Spaghetti Shells at least once a week. Spaghetti and my grandma's Spanish Rice make it on meal plan pretty much weekly. Growing up, we had my mom's spaghetti and meatballs at least once a week. My mom always made a big pot of homemade sauce that would last a few meals. I have vivid memories of her Read the full post >>>

Big Lots, bargains and even a little blood.

Big Lots, bargains and even a little blood.

It all started with dish towels. Yep, I admit it. I use Halloween and Christmas towels in June. If they are clean, they work just fine for me. My mom cracks me up. For the last few weeks, she has been commenting about these damn towels. "Next time you are at Target, pick up a couple new towels." "I brought this towel upstairs. It looks better than the ones in your kitchen." Yep, the towels I wash Read the full post >>>

“To market, to market, to buy a fat pig…”

If you have a toddler you probably have sung this Mother Goose nursery rhyme a few hundred times. Don't worry, I am not buying pigs at the farmers market. You all know I have an obsession with kale. All greens as a matter of fact. Last Thursday, I drove all the way to Sunny Bridge for organic kale. A 20 minute drive. I know, I am crazy. I go to the Washington farmers market later that afternoon Read the full post >>>

Food tips for road trips

Over the weekend, the hubster had an optometry conference in Niagara Falls, Canada so Madilyn and I decided to tag along. These days, when planning a trip, I always think to myself, "what are we going to eat?" Visiting a high tourist area like the Falls can be a healthy eater's worst nightmare. Chain restaurants and ice cream shops galore! Have no fear. A little planning ahead makes it all good. I Read the full post >>>

Sometimes you gotta break the rules. Relax a bit.

I get it. Some days it is impossible to make a meal from scratch. Some days I have the best intentions but life happens and all I want is Kraft Mac and Cheese. "What is the best I can do right now?" This is a question I ask myself often. As a kid, one of my favorite meals was Kraft Macaroni and Cheese. Oh yeah! That creamy cheese and those yummy noodles always brought a smile to my face.
