Kenny Chesney says “there’s something sexy about the rain” but I think there’s something sexy about warm desserts.
My rock star husband installed 4 window air conditioners in our house last week so yes, I can use the stove again. I am no longer sweating like a pig. Smile. Now that is sexy, right?
A simple rice pudding is where it’s at. Better yet, you probably have all of the ingredients already in your kitchen so prep is so stinkin easy. I know, I am obsessed with coconut and chocolate these days. If you ask me, they go together like bread and butter.

Since I am a busy mama, I try to have leftover cooked whole grains in the fridge at all times. This way, I don’t have to make them from scratch everyday. This saves loads of time. Try this simple recipe tonight for dessert. I used leftover brown rice but I bet this would be fantastic with quinoa as well.
Coconut Rice Pudding
Ingredients:
1 cup of brown rice, soaked over night and then cooked
1 can of coconut milk
1/4 cup of maple syrup
1/2 cup of toasted coconut
1 tsp vanilla
1 tsp cinnamin
1 tsp ground cloves
dairy-free chocolate chips, to taste
Directions:
In a saucepan, warm up the cooked brown rice. Add all the ingredients except the chocolate chips. Bring to a boil and stir and simmer for about 8 minutes. You want all the coconut milk to be absorbed into the rice. Add the chocolate chips. Add them at the end. Not the whole bag. 🙂
