4 easy ways to health-ify lasagna.

Lasagna is a quick, easy and affordable dinner option for busy families. I really try to minimize the dairy and wheat intake for our family. However, we are not perfect. Heck, I am Italian so sometimes I just gotta have lasagna!

I have, meanwhile, learned how to "health-ify" lasagna in 4 easy ways:

1. Add greens and lots of them. If I chop up spinach and kale and add it to the ricotta cheese mixture, my kids could care less and eat it all up. So, I add a ton of it. I am talking like an entire package of greens.

2. Substitute wheat noodles with brown rice noodles. I buy these brown rice lasagna noodles and love them. I add to the lasagna uncooked. Just add some extra sauce and let those noodles cook to perfection.

3. Buy organic dairy. Dairy products are one food category I splurge and buy organic when I can.

4. Add additional veggies like carrots, zucchini, garlic and onion. My kids will eat pretty much anything covered in sauce and cheese. I work with this fact and pack in as many veggies as I can.

    Oooh, yes! I totally need to healthify our lasagnas! I always mean to but then space it when I’m actually making them. Thanks for reminding me!

    And amen to kids eating anything covered in sauce and cheese. 🙂 And grown-ups too, for that matter. 🙂
