Quick holiday cookies. As seen on TV.


Seriously, where did December go? At the beginning of the month I thought that I was ahead of the holiday game.
We put our tree up the weekend after Thanksgiving.
A friend of mine made me a new holiday wreath for the front door.
I utilized online shopping and ordered presents.
I had the best intentions to get all of my cookie baking done weeks ago. On the contrary, I was up until 2 am last night putting away the last batch of snickerdoodles. I have nothing wrapped. Sigh.
It’s OK. Somehow it all gets done. And if it doesn’t? I bet it will all be OK. Who cares if you have 6 different kinds of cookies instead of 4?
Know what’s even better? A recipe that doesn’t even require you turning on the oven.
Oh yeah, this is the cookie I was making when I was featured on the news last week.
Peanut Butter Chocolate Coconut Clusters
Ingredients:
1/3 cup almonds, ground
1/3 cup unsweetened coconut flakes
1/3 cup raw cacao powder or cocoa powder
2 tablespoons peanut butter
1/4 cup agave nectar
dash of sea salt
Directions:
With a fork, fold together all ingredients until well blended. Form into small clusters. That’s all – no oven required!

  1. Ooh looks good! I made something similar yesterday but replaced the cacao powder with mini dark chocolate chunks, added rolled oats, and used almond butter instead of almond meal + peanut butter. I’m going to pick up some almond meal and try your version! Thanks!
