Read ingredients. Don’t worry about the rest.


I spent so many years of my life counting calories and looking at the amount of fat in products. Blah. It’s like another job. I am too busy for that crap.
These days, I go right to the ingredients listed on the back of the package.


I ask myself 3 questions:
1. Can I pronounce all of the ingredients?
2. Would my grandparents recognize them?
3. Are they real food?
In a perfect world, I would cook everything from scratch. Some days, life happens and I need something quick. I like to keep a couple packets of “Kitchens of India” seasonings to use on busy days. Plus, I adore spicy Indian food so it works. Get creative and add extra veggies, lean meats, beans, lentils, etc.

Crazy Easy Curry
Ingredients:
1 packet of “Kitchens of India”
loads of veggies (I used kale and carrots here)
leftover rice or quinoa
Directions:
In a deep saute pan, warm up the seasoning. Simmer with veggies and lentils for about 20 minutes. Serve over leftover rice. So easy!
