Leftover pineapple = random, yet yummy, dish.

Lots of Elmo going on up in here. We have Elmo dolls, Elmo sippy cups and an Elmo plate and bowl. We have 5 leftover Elmo half-inflated balloons in the dining room. Madilyn does not want to move on and deflate them. I guess I can’t blame her.
We also had lots and lots of leftover pineapple from her 2nd birthday party. Yes, I am a nerd. I made an Elmo fruit plate. Thank you Pinterest for your inspiration.

Sometimes, getting a decent meal on the table involves opening the fridge and the pantry and seeing what is laying around that needs to get used up.
Sometimes, it is a pleasant surprise when put together – like pineapple and pistachios. Who knew?!
Sometimes, it is OK to have instant oats for dinner.
Sometimes, your 2-year-old will think it is a totally lame dinner but eats it all up anyway. Score.

Pineapple and Pistachio Instant Oatmeal
Ingredients:
1 3/4 cups water
1 cup quick cook oats
2 tablespoons honey
sprinkle of cinnamon
1 cup of pineapple chunks, crushed
1 handful of pistachios, crushed
Directions:
Boil the water. Add the oats and cook for about 1 minute. Pour into bowls. Sprinkle with cinnamon and top with pineapple and pistachios. That’s it!
