The wind beneath my spicy, cajun “wings”
My husband, Brian, is addicted to chicken wings. Yes, totally addicted. He dreams about them. He tries his hardest to convince me that a monthly trip to his favorite wing spot is a priority.
Wings are not my thing but Brian is the wind beneath my wings so finding a healthier alternative is my mission. Insert sarcasm.
Brian is not alone with this addiction. Low cost dining spots like wing joints have become some of the country’s fastest-growing chains. More and more restaurants are offering wing specials for happy hours. Sure, they are delicious, cheap, and quick but what the heck are they doing to our health and waistline? It’s not pretty.
According to the hubster, the obsession to wings is all about the right sauce and the perfect crunch. Less about the chicken. Ok, cool. So we can use tofu. One point for Betsy.
Below is what we came up with and I am telling you what. They are damn good.
Hey, I might now be able to reduce the number of trips to the wing joint. Score.
Spicy Cajun Tofu “Wings”
Ingredients:
1 block of extra firm tofu, cut into squares, and dried
1 tablespoon of oil (we used sesame oil)
1 tablespoon pastured butter
4 tablespoons Frank’s RedHot
1 tablespoon Blackened Red Fish Magic seasoning
Directions:
Heat a frying pan until the pan is pretty hot. Add the oil. Let the oil heat. Carefully, add the tofu. Flip the tofu until all sides are crispy and brown. In a small saucepan, melt the butter. Add the hot sauce and seasoning. Serve the sauce on the side and dip the tofu. Enjoy!
Note: It is super important that the tofu is dry before you fry it. This is what gives you the awesome crunch. To dry the tofu, open the package and drain the water. Cut into cubes. Place the cubes on a plate and wrap them in two dish towels. Then, place this plate in the fridge and place something heavy on the plate. This will help dry out the tofu.
