Loads of leftover quinoa + fresh strawberries from the farmers market = time to get creative.
Creativity is a word that I have on my mind a lot these days. I used to take art classes as a kid. I loved to paint and draw. I even won a couple of first place ribbons at art shows. I wonder if I still have any talent? Hmmm I will have to try again soon.
Lately, I have been expressing my creativity in the kitchen. I have never made a sweet quinoa dish before so I thought I would try it out. See recipe below.
Madilyn expresses her creativity these days by picking out her own outfits. She loves to go into her closet and pick what she is going to wear for the day. They don’t match sometimes but who cares, right?
Sometimes the most delicious meals (or outfits) come together when we least expect it. Let your creativity get the best of you.
Sweet Strawberry Quinoa Salad
Ingredients:
juice of 1 lemon
1/8 cup of olive oil
3 tablespoons of agave nectar
1 tsp. ground cinnamon
1/4 cup chopped walnuts
1 bunch of strawberries, sliced
4 oz of fresh feta cheese
2 cups of cooked quinoa
1/2 cup fresh basil, sliced thinly
Directions:
Add the lemon juice, olive oil, agave nectar and cinnamon in a big bowl. Whisk together. Toast the walnuts on the stove for a few minutes until them become fragrant. Be careful not to burn them. Add the strawberries, walnuts, feta and quinoa to the bowl. Mix together well. Fold in the basil.

I love adding fruit to salads! I made a quinoa mango salad last week that was awesome. Will have to try this one!
