Welcome to Busy Women Mealtime Makeover! So, we have moved on to dinner over at the Busy Women Mealtime Makeover. This group of fabulous women are skipping past the frozen dinners and take-out this week and getting down and dirty in their own kitchens and they’re totally rockin’ it.
Eating healthy doesn’t mean you have to shop in exotic grocery stores or break the bank. It’s totally possible to throw together something nutritious, cheap as well as delish… AND use ingredients that are probably in your kitchen right this second.
Pasta lover like me? Try this one. It’s a winner and it’s makeover friendly. Score.
Pasta with Tuna & Olives
Ingredients:
1 lb. whole wheat pasta, or whatever you like
6 cloves garlic
1/4 cup olive oil
1 Tbl. crushed red pepper
1 tsp. salt
1 can tuna in water
1 jar pasta sauce, whatever kind you like
1 can black olives, chopped
3 cups chopped greens (I used swiss chard)
Directions:
Cook pasta according to directions. While it cooks, heat oil in a large skillet and add garlic. Cook until just golden, then add red pepper, salt and tuna (including the water in the can). Break up the tuna with a spoon, then add sauce, olives and greens. Stir to combine and continue heating until everything is warm. Spoon sauce mixture over pasta and eat up!
