Green Monster Burgers

Once you make these Green Monster Burgers you will never go back to regular burgers again. Oh, and then make some Blueberry Cobbler for dessert. Are you worried that your kiddos are not getting enough veggies in their diet? Worry no more.

Green Monster Burgers
Recipe Type: Dinner

Serves: 6 small burgers
Chop up any dark leafy green and add it to your favorite burgers!
Ingredients
  • 1 lb ground beef or turkey
  • 3 cups dark leafy greens, chopped very fine
  • 3 cloves garlic, chopped very fine
  • 1/2 onion, chopped very fine
  • any burger toppings of your choice
Instructions
  1. In a bowl, mix together the meat, chopped greens, garlic and onion. Form into burger patties. Throw on the grill and then top with your favorite toppings!

Making sure our kids get enough veggies is totally stressful especially when the kids are picky eaters. Will my girls eat steamed kale? Doubt it. Will they eat kale in a burger? You better believe it. I don't necessarily hide veggies in food. I am very upfront with my girls and tell them what they are eating. Now, they ask for "Green Monster Burgers!" I consider that a win.

I don't give my girls too many options when it comes to food. "Mom is making green monster burgers tonight." I make these statements instead of asking them, "What do you want for dinner?" Of course, they would say mac and cheese and chicken fingers if given the option. Make it easy for them. Don't give your kids that stress. Make those decisions for them. I am currently reading Candace Cameron's book, "Reshaping It All," and she talks about this very topic. She agrees that when our kids are little, we as the parents are responsible for making these food choices for them. When they are older and can demonstrate that they are making healthy choices, then you can give them that decision making power. I love this.

I buy frozen chopped organic kale in a bag and chop it up even more, add some onions and some garlic and then mix it with the ground beef or turkey. So good!

I am also reading Rachel Hollis' book, "Girl, Wash Your Face." I love her honestly. I love the fact that she never went to college yet put together a multi-million dollar brand. Her determination is inspiring.

I try to watch my bread intake because once it's in the house, I can't rest. So, I have learned to love burgers on a bed of lettuce. Top with all your favorite condiments and enjoy.
