Wait, did you say bacon? Yep. Sure, bacon can be healthy – it all depends on quantity and quality. This is one of the things I am teaching my makeover participants. My friend Monica agrees. Does she eat bacon daily. Heck no. Does she buy bacon from a good source? You better believe it sista.
Monica helps people discover a balance in their health and diet. How do you teach others to do this? Well, you gotta teach yourself first. She began Radiant Breath Wellness in 2011 as a dedication and celebration to eating clean, healthy, and making real food in a quick and simplistic way . Her journey through yoga has brought a greater understanding of how eating affects the body and how movement and breath helps with digestion, calmness, and contentment. Kale White Bean Bacon Saute
Ingredients:
1 can white beans (organic or fresh)
4 slices of bacon, chopped
1/2 onion, chopped
2 carrots, chopped
1 celery stalk, chopped
1 clove garlic, chopped
2 handfuls of kale
1-2 tbl olive oil
Directions:
1. In a large skillet, saute bacon over medium heat until crispy and then remove onto a paper towel.
2. Add your onion and saute until translucent.
3. Add the carrots, celery, and garlic and saute for 5-8 minutes.
4. Add your kale and stir around for 3 minutes.
5. Remove from heat and serve over brown rice or quinoa pasta or solo. Option: garnish with avocado and cucumber.
Note: To make this veggie option, omit the bacon! Enjoy!
