Luck, hard work and a little magic. (Cabbage too).

So, a few fridays ago, it was Friday the 13th. Am I superstitious? Not really but I did notice the date that day. Then, I remembered that I had a head of cabbage in the fridge. Cabbage is good luck in many cultures. Then, I thought, heck, maybe it will bring me good luck. Hey, why not try it out on a “scary” day.
Do I believe in luck? Maybe. Do I believe in hard work? Oh yes. Do I believe they can work together and magic can happen? You better believe it.

Luck or hard work? I think it was a little of both. Either way, magic happened and the cabbage dish I put together totally rocked.
Thai Purple Cabbage Noodles
Ingredients:
1 tablespoon olive oil
1/2 onion, diced
1 head of purple cabbage, core removed, sliced thiny
1/2 bag of spiral brown rice noodles
drizzle of tamari soy sauce
1/2 lime, juiced
salt and pepper, to taste
1/2 cup raw cashews, chopped finely
handful of fresh parsley, chopped finely
Directions:
Heat a skillet and add olive oil. Add the cabbage and onions and saute until they are soft, about 8-10 minutes. In the meantime, boil a pot of water and cook the noodles as directed on the bag. When the noodles are done, drain them and then add them to the skillet with the cabbage and onions. Toss. Drizzle the tamari soy sauce and the lime juice. Top with cashews and parsley.
