For some reason, I have been having a love affair with feta cheese. I admit, I am obsessed.
Cheese just makes everything taste better in my opinion. Cheese doesn’t do wonderful things to me but I have noticed that good quality cheeses don’t do as much damage as processed dairy products. If I overdo the dairy, I get phlegm in my throat and things don’t get moving if you know what I mean. Therefore, I try not to overdo it and I try to buy the best I can find and afford.
Plus, when I buy good quality cheeses it seems like it comes in such big quantities so I have to get creative over the next few days so none of it goes to waste. There is nothing fun about wasting food.

Fun Feta Cucumber Salad
Ingredients for Salad:
1 cucumber, chopped (If you find the skin to be tough feel free to peel it)
1/2 cup kalamata olives, halves (I get these babies off of the olive bar at my local grocery store)
about 15 cherry tomatoes, halves
1/2 pound feta, cut into cubes
Ingredients for Dressing:
3 tablespoons olive oil
1 tablespoon brown rice vinegar (Don’t have this? No worries. Skip it)
1 teaspoon agave nectar or honey
Pinch of sea salt
Freshly ground pepper
Directions:
Whisk together the dressing ingredients. Add cucumbers, olives, tomatoes and feta to salad bowl and toss gently.
Note: This salad is super delicious with some grilled fish or even some hummus on a pita. Yum!
