I can get some greens down her throat in pureed form in a smoothie. One night, however, she was loving some salad and I captured it on film. You just never know what they are going to like. I think the trick is to keep trying. This goes for our kiddos, our partner, even ourselves. Maybe you don’t like kale one way. Don’t give up and try it another way.

Miso Tahini Dressing
Ingredients:
1/4 cup miso*
1/4 cup tahini**
1/2 lemon, juiced
water, as needed
Directions:
In a medium bowl whisk together the miso and tahini to form a creamy paste. Add the lemon juice. Slowly add water whisking a little at a time until a creamy dressing forms. If thinner dressing is desired, dribble in a little more water. The dressing will thicken if allowed to sit a while. Keep refrigerated until ready to use. When ready to use toss with greens. Enjoy!
*Miso is a thick paste made from fermented soybeans and barley or rice malt. It can be found at most health food stores.
**Tahini is sesame seed paste. It is what is used in making hummus. It can also be found at most health food stores.
