Monster Eyes baked egg avocados

"Monster Eyes" baked egg avocados were a result of a friend of mine sending me a video of how to make them paired with my fear that my girls would never try them married to the fact that I know how darn healthy avocados are and I want us all to eat them daily. I am always trying to find new and fun breakfast foods for my girls and myself - like my go-to Real Food Blueberry Cobbler.

It was time to get creative. For some reason, if I put food in the shape of a funny face, my girls think it is hysterical and they usually gobble it right up. The "Monster Eyes" worked like a charm as well so I had to share with you all. Sure, you can make food faces with goldfish and pretzel sticks and candy but that is not real food, right? Why not use food that you NEED your kiddos to eat, not the food they WANT to eat. You are in charge, right? Try it. I am a big believer that kids will eat real food when they are hungry. If we keep feeding them junk food, sure, they will get filled up and not want baked egg avocados. Totally. I wouldn't either.

Serves: 2
Ingredients
  • 1 large avocado, ripe, cut in half and pit removed
  • 2 eggs
  • salt and pepper
  • fresh fruit
Instructions
  1. Preheat oven to 400 degrees F. Cut avocado in half and remove pit. Put in a baking dish. Remove some of the avocado flesh and give to your kiddos to eat. This makes more room for the egg. Crack eggs and put one in each avocado half. Bake in oven for about 20 minutes. Remove and place on a plate. Use as the "eyes." Salt and pepper as desired. Use fruit to make the nose and mouth of the face. Enjoy with your kids!
